vintages 2011 : Stamped with the seal of its terroir
This vintage is a true tribute to the Haut-Bailly style. An exceptionally warm and dry spring led to early flowering and fruit set in May. The heatwave on June 26 and 27 caused some sunscald, which was offset by a cool summer with normal rainfall, ensuring that the vines resumed their physiological development. A summer-like September allowed the harvest to ripen optimally. Having benefited from thinning that ensured good airflow around the clusters, the grapes were in excellent health by early September and displayed a dense, structured aromatic profile. Harvesting began on September 9 with the young Merlot grapes. It lasted three weeks under dry, sunny conditions. The particularly low yields of Cabernet were offset by a more generous production of Merlot. A rigorous selection was carried out in the vineyards, then in the cellars, where a new destemmer allowed the berries to be separated from the stems with unmatched gentleness and precision. Characterized by a fresh, delicate flavor and supported by a robust tannic structure, Château Haut-Bailly 2011 is a finely crafted wine, bearing the hallmark of its terroir.
